Champagne day is approaching and we’re cheersing with a glass of Taittinger. The lively freshness and great complexity this champagnes offers is the perfect drink to pair with any of our raw dishes at Bopp and Tone, especially our freshly shucked oysters.

The Story

Taittinger originates back to 1734 when the original Champagne house was founded by Jacques Fourneaux in Reims. Since then the Taittinger family has managed the Champagne House for nearly a century.  It’s aim has always been the pursuit of excellence. The name on the bottle conveys both the skills and knowledge of the past and a commitment to the future. Pierre Emmanuel Taittinger shares this commitment to the family name, with his son, Clovis and his daughter, Vitalie who both work beside him in the day to day running of the Champagne House.

Today the Tatttinger estate covers 288 hectares located between the ‘Côte des Blancs’, the ‘Vallée de la Marne’ and the ‘Montagne de Reims’. It is the third largest vineyard in the Champagne region, with a team of winegrowers, producers and real artisians, working towards producing the Champagne House’s unique style.

Champagne Taittinger Cuvée Prestige, is a blend of Chardonnay (40%), Pinot Noir and Pinot Meunier (60%) with a minimum ageing of three years in the cellars, where it reaches the peak of aromatic maturity. The bubbles are fine. The nose is very open and expressive, delivering aromas of fruit and brioche. This beautiful champagne gives off the fragrance of peach, white flowers (hawthorn, acacia) and vanilla pod. It is Medium bodied on the palate with a lively freshness and a great complexity with some stone fruit, white flower, brioche, green apple and long length.
